But in our hearts, there remains a vivid memory—our very first bite of a truly delicious hamburger in America. That unforgettable taste sparked our lifelong love for burgers.

With this special event, we’ve chosen to return to our roots and revisit the depth and potential of ground beef.

Infused with years of experience and renewed passion, we’ve pursued a flavor and texture that only ground beef can offer.

By blending the distinct identities of our signature burgers, we’ve created a one-of-a-kind collaboration that can only be experienced during this event.

Concept

We set out to create something bold—flavors that challenge the very foundations of what a hamburger can be.
Free from the constraints of the traditional double cheeseburger, we revisited every element—bun, patty, and seasonings—with care and intention, crafting a burger that reflects the values of both teams.
Even the flavor-defining accents were treated with the same dedication.
Munch’s Burger Shack developed their own house-made ketchup, while Shake Tree created an original Thousand Island Sauce—each reflecting their individual philosophies.
This isn’t about gimmicks. It’s a straightforward, honest pursuit of flavor.

With passion, precision, and mutual respect, we’ve gone beyond the rules to deliver a taste you can only experience here—and only for a limited time.

The Hidden Star: A Bun That Lets the Patty Do the Talking

When crafting this special double cheeseburger, we poured just as much passion into choosing the bun as we did the patty.

In our pursuit of the ideal bun, we went through countless rounds of testing and revisions.

Initially, we asked for a lighter bun with more fat content, but bakers warned us about issues with excessive air pockets.
What we cared about most, however, was the texture when biting into it.

So we made a bold choice: we gave up on butter and used olive oil instead, increasing fermentation beyond the standard level.
The result? A bun with a rich aroma, a crisp exterior, and a light, crackly texture.

To achieve perfect harmony with the patty, we asked not one but five different bakeries to help us develop the right bun.
From sizing to mouthfeel, we obsessed over every detail—seeking a bun that would never overpower the flavor of the patty, yet still offer smoothness, lightness, and depth of its own.

Instead of using our usual buns, we chose a specially made potato bun that brings out the best in this particular patty.
Its tender bite and subtle sweetness strike a beautiful balance with the juicy richness of the meat.

From Passion to Plate

Yutaka Yanagisawa (Munch’s Burger Shack)

“We want to make people happy with great food.”

That simple idea is where Munch’s Burger Shack began.

With limited funds, we started out in the most accessible way we could: a food truck.
We’ll admit, it was a modest beginning—and perhaps even a bit naïve.
But that tiny mobile kitchen was the start of everything.

Through our time on the road, we learned a lot and met many inspirations.
Among the most influential were As Classic Diner and Baker Bounce.
Seeing how our predecessors brought out the natural flavor of ingredients ignited a desire in us:
to serve warm, homemade food made with heart.

That’s when the foundation of our burgers was born.
We became obsessed with the deep, bold flavor of lean red meat.
We began breaking down whole cuts of chuck roll by hand, exploring how to make the meat itself the star of the burger.
It was during this time that our signature hand-cut bacon, chopped patties, and other labor-intensive elements first came to life.

The food truck gave us confidence—but also new challenges.
We improved operations, refined quality, and built experience.
Still, the image of being “just a burger truck” lingered.

We wanted more. We wanted people to come to us—to visit our space, under our name.
That’s when we made the leap and opened a brick-and-mortar shop.

If we had to sum up our philosophy in one line, it would be this:
“We want burgers to be respected as meat dishes.”

From hand-selecting premium cuts and carefully trimming them, to crafting patties that maximize the flavor of lean beef—everything we do revolves around the meat.
Our bacon, ham, fried chicken, and BBQ are all made in-house.
Even our fries and side dishes—often seen as afterthoughts—are made with the same level of care.

Yuta Kimura (Shake Tree)

Back in college, I was deeply drawn to American culture.
During a trip to the U.S., I found myself in a vibrant restaurant—filled with the laughter of guests and friendly conversations between customers and staff, all while enjoying burgers and drinks.

That scene stayed with me. I thought, I want to create a place like this.”

After working at TGI FRIDAYS and Brozers’ in Ningyocho, I set out on my own at age 29.

The name “Shake Tree” comes from the expression to shake a person’s tree”, meaning to surprise or delight someone—and that’s exactly what I wanted our restaurant to do.

I’ve always loved both steak and hamburger, so I designed our patties to deliver the best of both worlds.

We don’t stop at classic combinations of bun, meat, and veggies.
At Shake Tree, we serve burgers that challenge the very definition of what a burger can be—like the World Famous Wild Out, which skips the bun entirely and uses only meat and vegetables, or the Red Devil, which you dunk into a bold, soup-like sauce.

Going forward, I hope to keep building a restaurant where my team and I can truly enjoy what we do—and where our customers leave with a smile.
